I was planning on making chocolate cookies for the next schoolday, but the texture was a bit sticky, making it turn out as an amazing chocolate brownie cake!

  1. 1 cup cashews
  2. 1 1/4 cup dates
  3. 3 eggs
  4. 1/4 cup vanilla or chocolate protein powder (I prefer Sunwarrior)
  5. 1 cup rice flour
  6. 4 tablespoons raw cacao
  7. 1 tablespoon cinnamon
  8. 1/4 cup melted coconut oil
  9. 1/3 cup cacao nibs
  10. baking soda
  11. some pecans for the topping
  1. Preheat the oven on 160C.
  2. To make the cake, process the cashews in the food processor until you get a rough flour consitancy.
  3. Add the dates and process until it’s blended with the cashew flour.
  4. Add all the other ingredients except for the cacao nibs and process until the dough is a bit sticky and you can form it into a ball.
  5. Add the cacao nibs and press on the bottom of a 24 cm spring-form pan.
  6. Top with pecans.
  7. Put it in the oven for about 20 minutes.
  8. When the brownie cake is ready, set aside to cool down and enjoy!
