Hi guys! As I mentioned in my November Diary, I got delicious potato mashes to eat at the potato mash dinner party, among which a a delicious arugula potato mash. I made this recipe at home a few days later with a few ingredients changed to make it a healthy recipe. The result: sweet mashed potatoes with arugula, oven roasted cherry tomatoes, garlic and pesto, with a fish schnitzel on the side.

As promised I have written out the recipe for you. I wanted to include the photo’s of the recipe, but I quickly found out that potato mashes are quite hard to photograph. Forgive me that these recipe photo’s are less attractive as for instance this oven baked oatmeal pie. You’ll just have to believe me on my word that this arugula potato mash wash finger licking good!

Arugula, Tomato and Pesto Sweet Potato Mash with Fish Schnitzel

Arugula, Oven Roasted Tomato and Pesto Sweet Potato Mash with Fish Schnitzel

Recipe for 2 servings:


Ingredients for the potato mash:
1 tablespoon coconut oil
2 large sweet potatoes, peeled and cubed
1/2 tablespoon black pepper
1/2 teaspoon salt
1/2 tablespoon Italian herbs
1 tablespoon pesto
1 clove of garlic, finely chopped
2.6 ounces arugula, washed (75 grams)

Ingredients for the roasted tomatoes:
12 cherry tomatoes, washed and cut in half
1 pinch of salt
1/2 teaspoon ground black pepper
1 teaspoon Italian herbs

Ingredients for the panga filet:
1 tablespoon coconut oil
7 ounces panga filet, divided into 2 filets (100 grams each)
3 tablespoons of buckwheat flour
1/2 teaspoon ground black pepper
1 pinch of salt
1/2 tablespoon of curry powder
1/2 tablespoon of olive oil to grease an oven dish and the cherry tomatoes.

1. Preheat the oven at 390ºF (200ºC)

Instructions for the cherry tomatoes:
2. Spread the tomatoes on a parchment paper lined baking sheet and slightly coat the tomatoes with olive oil, salt, pepper and Italian herbs. Set aside.

Instructions for the potato mash:
3. Cook the sweet potato until they’re soft.
4. Add coconut oil, salt, pepper, pesto, garlic and Italian herbs and mash the potatoes.
5. Grease an oven dish with olive oil and add the potato mash.
6. Put the dish in the oven together with the baking sheet. Bake for 20 minutes and set aside while keeping the potato mash and cherry tomatoes warm.

Instructions for the fish schnitzel:
7. Combine the buckwheat flour, curry powder, salt and pepper, spread out the flour in a thin layer on your kitchen counter and dip each fish filet into the flour.
8. Melt coconut oil in a griddle and fry the filets until each side turns golden and the filets are well done.

Last step:
9. Combine the mashed potato with the cherry tomatoes and arugula. Serve with the fish schnitzels.
