I also share my five favorite recipes for healthy cake. These delicious healthy cakes are perfect to serve your model friendy with her cup of tea next time you have a date with her.
Cake base made with dates and nuts
[dropcap]M[/dropcap]ost cake crusts consist of a dough containing gluten and refined sugars. To make your cake crust gluten-free and free of refined sugars you can use Medjool dates and nuts, such as almonds. Mix the dates in a food processor with the almonds and press the ‘dough’ flat in a spring form pan.
Filling: soaked nuts
For the filling, I often use a base of soaked cashews. I mix them with cooked pumpkin, coconut cream or strawberries for example. I bring this mixture to boil with agar agar; a vegan, natural product that stiffens liquids. I then pour the mixture into the spring form pan on top of the date-almond base. Leave the complete cake in the fridge to stiffen and voila!
Topping: fresh fruit or nuts
Very simple, but effective, healthy and delicious: fresh fruit or nuts! Choose slivered almonds and/or sliced strawberries for instance. The possibilities are endless; what about banana slices on an almond paste cake?

1 Strawberry coconut cake

This is my all time favorite! Also my mother’s fav; she quite often asks me if I want to make her one.
2 Raspberry ‘cheese’ cake without cheese
Gluten-free, lactose-free, egg-free, refined sugar free, vegan. Contains nuts.
This cake resembles a monchou cake (is that known in the US? I don’t know …). It is a vegan raspberry ‘cheese’ cake with a tangy sweet raspberry topping, soft, creamy vanilla lime ‘cheese’ filling and a crunchy, salted almond date crust. After I made this for Mother’s Day, it was the new favorite of my mother. Brother was also content with it.
3 Oven Baked Oatmeal Pie With ‘vanilla’ Sauce
Gluten-free (you submitted their gluten-free oats used) , lactose-free, egg-free, refined sugar-free, vegan. Contains nuts.
So healthy; you can even have it for breakfast!
4 Pumpkin ‘cheese’ cake without cheese, with ‘caramel’

Divine! I treated the whole team I was shooting with on this cake when it was my birthday last year. Everybody loved it!
5 Raw chocolate cake with peanut butter and banana (recipe in Dutch)
Gluten-free (when using gluten-free oats), lactose-free (when using soy yogurt), egg-free, refined sugar-free (depending on the brand of soy yogurt), vegan (when using soy yogurt). Contains nuts.
Is there anything more divine than the combination banana-peanut butter-chocolate? Exactly: a banana-peanut butter-chocolate cake!
