It’s November, which means it’s pumpkin season! Pumpkin is very tasty and healthy, but how can you use pumpkin in your dishes? I made a list of my most delicious pumpkin recipes to give you a helping hand. All recipes are gluten-free, lactose-free and (refined) sugar-free.
1. Spicy pumpkin gingerbread
A surprisingly tasty gingerbread with amongst others fresh orange juice, ginger and – of course – real pumpkin.
2. Pumpkin incaberry granola
This healthier granola is crunchy, sweet and slightly sour due to the addition of incaberry. This recipe also contains real pumpkin.
3. Pumpkin ‘cheese’ cake with ‘caramel’, without cheese
This ‘cheese’ cake is one of my all time favorite healthy cheese cakes. The filling contains real pumpkin and silken tofu. The bottom layer contains healthified caramel and the topping consists of almond slivers in ‘caramel’. A must-try! P.s.: believe it or not: this recipe is also lactose-free, gluten-free and sugar-free.
4. Copycat Starbucks pumpkin spice latte
Do you remember previous year’s Starbucks’ pumpkin spice latte? The original one is flavored with spices. I flavored my copycat pumpkin spice latte with real pumpkin! In the recipe I also explain how to make dairy-free, sugar-free whipped cream.
5. Spicy pumpkin soup with apple and coriander
Sweet and slightly spicy; a luscious pumpkin soup for cold and dark days. Festive enough to serve at Christmas!
