Recipe: Salty Cinnamon Sweet Potato ‘Fries’

Since I ever ate my first sweet potato (not to be confused with its brother the yam), I’m hooked on this wonderfully sweet and versatile vegetable, that is not only beneficial for my health, but also benefits my skin!

One of my favorite sweet potato recipes? Salty sweet potato ‘fries’. Definitely with lots of cinnamon.

Health and beauty benefits of sweet potato

Sweet potato is a root vegetable that is only distantly related to the white potato. Reasons to choose sweet potato over potato:

sweet potato contains

  • more fiber than white potato;
  • a whole lot more vitamin A than white potato;
  • more vitamin C (beneficial for your immune system) than white potato;
  • more calcium (beneficial for your bones) than white potato;
  • manganese (beneficial for your metabolism), white potato doesn’t;
  • a lot fewer calories than a white potato.
  • Sweet potato: nightshade-free

Last but not least, sweet potato is not a nightshade vegetable, while a white potato is. Eliminating nightshades from the diet can help alleviate mental, physical and emotional complaints in certain segments of the population.

You do understand now that I very much like the sweet potato; not only because of its taste, but also because of its health and beauty benefits!

Ingredients
  1. 4 sweet potatoes (medium size)
  2. 2 tablespoons ground cinnamon
  3. 1 teaspoon finely ground sea salt
  4. 1 tablespoon coconut oil
  5. 2 hands pecan nuts
Instructions
  1. Remove the skin from the sweet potatoes.
  2. Use a food processor to cut the sweet potatoes in 'fries', or cut the sweet potato in 'fries' by hand.
  3. Boil the 'fries' in a sauce pan for about 3 minutes or until slightly tender (test with a fork).
  4. Sieve the 'fries' and slide the fries into a bowl.
  5. Add the sea salt and cinnamon and stir well.
  6. Heat the coconut oil in a frying pan.
  7. Add the sweet potato 'fries' and stir-fry them for 2-3 minutes or until they start to tan.
  8. Slide your 'fries' an a plate and top with pecans.
  9. Serve with your favorite vegetables (I would go for carrot!).
Notes
  1. I've put fries in '', as stir-frying doesn't give that crunch that real fries have. In this case, 'fries' says more about the shape than about the crunchiness of this recipe.
