Fritters, fritters, fritters

A fritter (also referred to as ‘beignet’) is an ingredient dipped into a batter of usually wheat flour and eggs and pan-fried or deep-fried in fat. There are many kinds of fritters, ranging from corn fritters and potato fritters, to pineapple fritter and apple fritter.

Super Skinny

In this video I’m showing you how to make none of these. Instead, I’m showing you how to make super skinny zucchini chicken fritters.

These fritters are not only super skinny. They are also:

  • gluten and lactose free – perfectly paleo-proof
  • pan-fried in coconut oil – healthy fatties!
  • low carb – read my post about a low carb diet
  • high fiber – necessary to become a poop machine
  • high protein – restores a.o. skin and muscle tissue
  • only 124 kcal each – just saying. Want to know more about your required calorie intake? Read my blog post about that.

Overall conclusion

  • Zucchini chicken fritters are a perfectly healthy, lean option.
  • The best option is to have them for lunch or dinner.
  • Keep some fritters behind for a quick & healthy carry-on snack.
  • Leave out the garlic (or use less) if you have a photoshoot the day after eating them (I am so sorry for that makeup artist that had to smell my garlic breath the whole makeup session :().

For the fritters
  1. 12oz organic chicken (350 gram)
  2. 1 large zucchini
  3. 1 bunch fresh parsley
  4. 1 clove fresh garlic
  5. pinch of fine ground sea salt
  6. 1/3 teaspoon ground black pepper
For the batter
  1. 2/3 cup buckwheat flour (100 grams)
  2. 2 free range eggs
  3. 1/4 cup 1.8 fl.oz water (50 ml)
  4. pinch of fine ground sea salt
